Here is something a client wants to share...
Perfect Pot Roast
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon oregano
1 teaspoon cayenne pepper
1 teaspoon paprika
1 2 pound lean chuck roast
2 tablespoons extra virgin olive oil
4 large celery stalks cut into 2 inch pieces
4 large carrots cut into 2 inch pieces
1 large white onion cut into wedges
1 cup chicken broth (home made or low sodium)
1 cup marsala wine
Combine cumin, chili powder, oregano, cayenne and paprika in a small bowl.
Evenly coat roast with spices.
Heat olive oil over medium flame (stove top).....Brown roast for eight
minutes turning occasionally for even browning. Then in stockpot add roast,
celery, carrots, onion chicken broth and marsala wine. Cook in stockpot
either high for 5 hours or slow for 10 hours. Rich and I cooked on high for
5 hours and it came out wonderful!!
